PANEER!

We are not a huge fan of frozen meals. Somehow never got to liking it. In fact peas are the only vegetables I use frozen cos I am forced to as we dont get fresh 'peas'. Frozen parathas are our last absolute last back up at home. I cook fresh food everyday which is a challenge here in the US as you have to stock your grocery in advance unlike India where you will fnd it round the corner at a store. But I go the extra mile and make sure we use fresh veges except peas. I am sure it works well for some women and I respect that, never worked for us...

P really wanted to try Haldiram's paneer tikka and I wasnt so sure. I loveeeeee paneer so didnt want to take a chance of disliking a paneer dish BUT it was awesome. Totally recommend it hopefully they maintain the taste.

Cooking routine

I am a fairly decent cook but for some reason Tea and making rotis were two things I never attempted since I started cooking in 2005 after wedding. I have made very complicated and time consuming recipes so I am not sure why I avoided these two.

I am a tea drinker I love my typical desi chai. I started using the tea bags although didnt give the same taste. Finally in 2-3 years started making tea, properly boiled with mil and sugar etc. I can finally claim I make decent tea for some time now.

Recently I started my roti making project. Its been a month and I have made great progress. I have used up for the first time a 5 kg bag of chapati atta in almost a little over a month. I started making the typical south Indian version of chapatti, the thick ones with many folds. Then graduated to basic roti. The main reason has been gas stove and tava. Past 7 years one the electric stove not sure why I never was motivated to make rotis. I have a goal and hope I get there in 2-3 months.

I am really content with the past cooking routine. Especially with rotis since unlike working women in India you do not have any help here (not that I am complaining I feel the kitchen hands or maids make you lazy, bossy and create depdendency on them!). So right from making the dough and cutting vegetables, loading, unloading dishwasher, cleaning the house, folding heaps of laundry etc is a lot of work and time.

Although its a lot of cooking at once at night as I cook lunch next day to take to work, since mornings are unpredictable with the twins, feeding breakfast getting them all ready to goto school the whole routine can be smooth to a lot fo work depending on how they feel altough its getting better due to less cold etc with the weather improving, you never know ;), so I dont want to take a chance hence I cook lunch in advance and refrigerate it. That way it helps me prioritize and focus only on the girls in the morning.

Good news etc

My bestie had her baby today 10.11.12 at 33 weeks. So overjoyed and nervous until I talk to her hope she is recovering well. Its the joy of my bestest friend from school days entering the next phase in her life. She is so good with babies and loves them to bits and she will be such a great mother yay! I so wish we were closer in distance so I could hold him.....

In the Food department side...
Ate out way too much this week. 2 days in WI, then Diwali lunch with colleagues. Then Dinner with a friend. I got take out for folks at home and the portions were so much (yes Sichuan Gourmet) that ate leftovers next day too. I am done eating out for a while (hopefully ;)). Miss the home cooked meal now.

A good find

So I discovered that BJs sells fresh, organic pasta in their ready to eat section. I got it for the first time last week. I believe they have spinach and cheese ravioli and Squash ravioli varieties in vegetarian section anyway. I quite liked it. It also motivated me to make some homemade marinara/pasta sauce. For the first time I made it and turned out yum. I just made very little as a trial run. I need to get basil when I make it next. Its such a simple recipe. AL and AG both showed interest as sometimes they are bored of the usual daal-chawal- veges combo and they like to eat themselves these days anyway.

AG and AL are fond of ParleG since a few months now. Thanks to my parents who are used to biscuits with morning tea. It used to be a pleasent site in the morning to watch Grandparents and Granddaughters relishing ParleG sitting quietly on the couch at 7am. Well it was mostly AG. (AL was a late latif, she tends to sleep much after AG and wake up much later).

Life's simple pleasures....

Brussel Sprouts and Kali Daal

Since forever now wanted to try Brussel sprouts, they have good nutritional value, look exactly like cabbages or rather mini cabbages. Finally got them last week and made a curry exactly like cabbage curry (the basic one without masalas) and it tasted very good. P also liked it! Yay!

Made Kaali Dal today, not a complete rich Daal Makhni with the fancy cream and all. Just a basic 'Maa ki Daal', it tastes pretty ok. Made Jeera Rice and hopefully P approves it :-)

Breakfast ideas!

Have started making (or more like assembling) Yogurt parfait for breakfast since one week. Its healthy, fresh and a hit. More importantly hard-to-please DH has given his sign-off, it can be added to the 'regular breakfast menu'. Its been very hard to settle on what to eat for breakfast, cereal is fine once in a while but not everyday. And then DH does not prefer South Indian breakfast of Idly and dosas once in a while is okay but not everyday it just gets boring - he dosent feel as healthy to eat it on a daily basis apparently and he much rather eat it on weekends. He thinks there is a bit too much of oil and ghee in South Indian tiffins than required to have it first thing in the morning. I can avoid adding Ghee and Oil but then taste is definitely compromised when there is no ghee ;) (Maybe its just me obsessing that you rather make it properly and have it or don't have it at all, that's my attitude towards any Indian dish probably thats rubbed off on him?)
Then I also recently tried breakfast tortilla wraps in the morning. Its working out fine too. Planning to extend it and make the Indian wraps or Frankies as we call them, which we used to eat while in school, also hopefully it turns out well.
Looking out for more healthy breakfast recipes and options!

When did I turn into such a foodie?

Had the best Vegetarian Quesadillas ever for lunch, topped with Guacamole, Salsa and Sour cream yummm! Either this cafeteria at W serves very good food, or my standards have fallen. I am sure its the former, the food critique in me is very much alive.

Food!

These days I am obsessed with Mexican food. I have always loved it, but for some reason never tried Chipotle all this while. DH took me there last weekend and I had had the Vegetarian bowl and I loved it. I love beans. I love avacados. I just love the freshness it has. I don't know how authentic Mexican it is (pretty sure its very Americanized) - but I love it! At work at the cafeteria the day its Mexican I make sure I don't carry lunch.
As a side note I am totally in love with Zucchini as well. It started in NZ on the form of courgettes and the sauted/ roasted/ grilled zucchini has found a special place in my stomach ever since.

Palak/Spinach rice

Recently a distant relative of mine had invited us for dinner and served Palak rice in the main course. I made it last night for the first time for taking it for lunch today at work. And it tastes really good and it was very quick and easy to make.

Ah! about that vege thing again!

Whenever I dont carry lunch I eat at the Company's cafeteria. The reason I specially mention 'cafeteria' is because the location of the office is in a isolated part of the town. Well kind of. Waltham, where I live is much more busier, here in Concord its right next to Minuteman Park and the Air force and civil airport and then there are small farms around, so no fast food joints are that close by, to buy lunch outside, which is of course a blessing in disguise. That is the reason the cafeteria is well established and stocked with food, I dont see anyone going out for lunch. The main thing I wanted to focus on was the cook, Steve. He is one sweetheart. I told him I am a vegetarian. And he curiously asked all the details. I was honest with him, that when I was young it was a religious thing that my family followed, but once I grew up it was by choice and I do not eat or desire to eat it. And it took him by surprise a little, but he quickly promised me to cook anything vege if I give him few hours notice, like around breakfast time. How sweet is that. I havent made use of that offer so far in these 3-4 weeks and I enjoy his veggie sub which I have had once, every week for the past 3 weeks. Today the person in front of me had ordered some meat sub, every possible slice of meat went into it. I couldnt somehow imagine eating if my veggie sub were made on that same wooden platform in front of me. But Steve being Steve, offered to wipe it with sanitizer, changed his gloves, used a new knife to make me my sub. He was so sweet and thorough.
Sometimes strangers are more considerate than so called aquaintances. We have been invited for dinners once or twice and people did not bother cooking anything vegetarian despite knowing that we are vegetarians. Like my other vege friend D puts it. They make meat curries and one dal - and the vegetarian person is just suppose to eat dal with rice alone is it? its insulting! :)

Gashi etc

Another day of snow yesterday. It wasn't that bad but everybody kept talking about the winter storm and it received more hype than it needed, in Boston at least. Or so I thought sitting comfortably in my couch at home and looking outside :) Anyway the good part about such hype is P worked from home. But its difficult to get things done when P is around, invariably I get lazy. Even he couldnt get much work done.

On the non-lazy front I made Gashi yesterday. I know I am on a roll or what? another new Konkani dish introduced to my husband. It was as close as it could get to my Mom's :)

Ambat

I made Ambat for the first time ever. Wonder why I never made it all this while. It turned out well. P and I hogged :)
Whenever I cook Konkani dishes and which is at least 2-3 times a week the coconut oil brings back memories of childhood and I miss my Mommy so much :(

Spring rolls!

Had the tastiest veggie spring rolls some days back when P was down here in Toronto. At this place called Spring Rolls. This is the best I have had after Mainland China in HYD, Slurp! (have to mention that Nan King was pretty bad when I visited HYD 2 years back).

Salads

I have been usually pretty 'indifferent' towards salads all this while. I enjoyed salad bars when I visited US the first couple of times and then it died. We have our own Indian salads (Kosumbri, raita etc) and was content with it, but somehow never got hooked on to the western salads. But off late since I have been living in Canada I have been enjoying it. Whether the basic green salad or macaroni salad. Currently I am in a state that I can eat red skin potato salad any time of the day and totally get into a potato salad- binge mode. Recently I also had this other salad which I have never had in my life - strawberry salad. I dont know if it has another fancy name, but thats what it was basically strawberries and almond slices and a great sauce! Yumm!
Now that I think of it these past two months I have had salads only from 'Pickle Barrel' - Caesar salad, Honey mustard salad, Mixed green salad and my favorite Greek salad!

Veggie Hotdogs

Toronto/Canada is the first place where I have seen Veggie hotdogs being sold along with the real hotdogs. As a vegetarian, must say I am glad. Still havent got myself to try it - the image of a hotdog being made with meat is still stuck in my head.

I am Bourbonette!

I miss Bourbon biscuits. However I don't eat them as I used to back home (It is available in India stores). I thought Oreo could be a good substitute. But Oreo has its place and so does Bourbon. I thought its worth dedicating a post in the blog to my dearest and favorite cookie, which reminds me of home and childhood days.

BTW I googled Bourbon and guess what I found on BBC website:

Bourbon Biscuits The chocolate bourbon cream is the single most perfect object known to man. Such is the enthusiasm for bourbons that new words have been invented to describe fans of the biscuit, such as:
  • Bourboneers - a group of bourbon eaters
  • Bourber - a bourbon eater (masculine)
  • Bourbonette - a bourbon eater (feminine)

For the benefit of those outside the bourbon distribution area, a bourbon cream is two rectangular biscuits roughly 3cm x 6cm, and 5mm in depth, on either side of an oval of chocolate goo which never spills out from the sides of the biscuit1. This chocolate invention has created many schools of thought depending on the personality of the consumer. For example:

How to Eat a Chocolate Bourbon Cream

The Traditional Method

Some gorge on the bourbon in the same way you would eat, say, a digestive, though some bourbers would argue this demotes the bourbon to mere 'everyday biscuit' status and labels it fit only for dunking purposes.

Scrape Method

  • First, the top biscuit is removed and eaten whole. The body thinks, 'Okay, a chocolate bourbon biscuit without goo.'

  • The body therefore releases its own sugar rush to compensate.

  • Imagine the body's surprise when the bourber scrapes the goo with his/her bottom teeth.

  • The double rush of chocolate renders the scrape-style bourbon eater in chocolate heaven.

  • Once this rush is achieved the scraper will never go back to the traditional way of bourbatious mastication.

  • The increased glucose in the body seriously hampers said person for life

Fresh veges

Nothing can beat the feeling of cooking using fresh vegetables. It is a bit tiring to cut vegetables if your not in the mood at times, a bit time consuming actually. But its a good step to healthy eating. In fact frozen mixed vegetables (for pulao, biryani and a few dishes that really need lot of veges) and drumsticks, cos fresh ones are not available at times, is the only frozen part in my cooking, and I am proud of it.
